jambalaya


i ventured out of my comfort zone and made a batch of jambalaya today.  i do not like cutting up raw meat.  two pounds of chicken breasts and one pound andouille sausage to be exact.  add in diced tomatoes, tomato sauce, chopped onion, chopped green pepper, chopped celery, corn, peas, oregano, parsley, cajun seasoning, cayenne pepper, one cup rice, four cups chicken broth, one cup white wine into the slow cooker for eight hours on low.  the house smells wonderful.  shane, doug, and i will be feasting like kings.

I've made Harry Connick, Jr's jambalaya recipe in the crockpot before, and it's always turned out great. I bet yours will be mighty tasty! (I think the andouille makes a big difference!)
